Olluco of Chupe Recipe
Olluco of Chupe, or also known as Soup of Olluco with milk is one of the most traditional Andean Recipes of Peru, This small tuber is also known as Melloco, Ulluco or Papa Lisa, being one of the main ingredients of Peruvian Gastronomy.
According to history this was a nutritious recipe in the diet of the Incas, and has become one of the main recipes of Cuzco, crowned as the Gastronomic pride of the Andes, over time it has been adding new ingredients such as milk, the cheese and parsley offering an exquisite flavor. Also the Peruvian Gastronomy is considered one of the best in the world, being a good option to delight their rich flavors.
This folkloric Peruvian soup, so easy to prepare, has 2 essential ingredients from the country of origin, the Ulluco and Peruvian yellow pepper, few countries have the availability of having the Peruvian yellow pepper for the elaboration of the Melloco of Chupe. Do not worry, instead of using Peruvian yellow pepper, you can use turmeric powder.

Olluco of Chupe Ingredients
- ½ kg of Olluco
- 4 white potatoes girls
- 1 diced onion
- 200 grams of green beans peeled
- 200 milliliters of evaporated milk
- 1 corn
- 200 grams fresh cheese
- 2 tablespoons of oil
- 1 tablespoon ground Peruvian yellow pepper
- 2 tablespoons ground garlic
- 2 eggs
- 1 twig of huacatay
- Ground oregano
- Salt to taste
Olluco of Chupe Preparation
1ºP: Wash and chop the Olluco in julienne. Cut the sliced corn, peel and chop the potatoes in half.
2ºP: In a large pot, add oil, garlic, onion, and sauté for 3 minutes, then add the Peruvian yellow pepper and sauté for 3 more minutes.
3ºP: Add 7 cups of water, the Ulluco in julienne, the potatoes, the corn and salt to taste let cook for 30 minutes, then the beans, the huacatay and let cook 15 minutes more
4ºP: In a bowl beat the eggs, chop the cheese into squares and cut the leaves of the parsley into thin pieces
5ºP: At the end of the 15 minutes of cooking add the beaten egg, milk, cheese, parsley, oregano. Put out fire.
6ºP: Serve and enjoy, Bon appetit!. It can be accompanied by a delicious purple chicha.
