Olluco’s Arrebozado with Eggs Ingredients
- 1 kg of Olluco
- 6 eggs
- 3 tablespoons ground garlic
- 4 tablespoons of vegetable oil
- 3 branches of parsley
- Pepper and cumin
- Oregano powder
- Salt to taste
Olluco’s Arrebozado with Eggs Preparation
1ºP: Wash and cut the Ollucos in medium julianas. In a pot the Ulluco cooks with water for 15 minutes, when finished let it dry.
2ºP: In a bowl beat the eggs, also chop the parsley leaves into thin pieces.
3ºP: In a frying pan, add the oil, the beaten egg and fry for 2 minutes, then add the Ullucos and sauté for 5 more minutes, salt to taste, pepper, cumin, a pinch of oregano powder and sauté for 5 more minutes .
4ºP: Turn off fire and add the chopped parsley. It can be accompanied with a Portion of Rice.
5ºP: Serve and enjoy, Bon appetit! It can be accompanied by a delicious purple chicha.
