Olluquito with Charqui Ingredients
- 1 kg of Olluco
- 200 grams of Charqui
- 200 grams of peas
- 1 diced onion
- 1 diced tomato
- 2 tablespoons ground garlic
- 2 tablespoons of oil
- 1 tablespoon ground Peruvian yellow pepper
- 1 tablespoon ground Peruvian red pepper
- Ground oregano
- Salt to taste
Olluquito with Charqui Preparation
1ºP: Wash and chop the Ollucos and Charqui in julienne. Chop the parsley into thin pieces.
2ºP: In a pot add the oil, garlic, onion, tomato, pepper and sauté for 3 minutes, then add the yellow and red pepper and sauté for 3 more minutes.
3ºP: Then add the Charqui, oregano and let cook 5 minutes, add the Ullucos, ½ cup of water and salt to taste, let cook for 30 minutes over medium heat (5).
4ºP: At the end of cooking add the parsley and turn off the heat. It can be accompanied with a Portion of rice.
5ºP: Serve and enjoy, Bon appetit!. It can be accompanied by a delicious purple chicha.
