Quinoa Paella Ingredients
- 350 grams of Quinoa
- 1 red onion in squares
- 2 tablespoons ground garlic
- 2 tablespoons of vegetable oil
- 1 red pepper
- 2 tomatoes in squares
- 2 tablespoons of olive oil
- 250 grams of peas
- 2 teaspoons of turmeric
- Saffron
- 4 green beans
- 12 prawns units
- 200 grams of squid
- 200 grams of clams
- 8 mussels units
- 1 liter of fish broth or (8 heads of fish)
- Salt to taste
Quinoa Paella Preparation
1ºP: Wash squids, mussels, clams and prawns. Wash and chop the beans also liquefy the red pepper
2ºP: In the case you have prepared the broth, avoid the next step. (Cook the fish heads in 1½ of water for 30 minutes and strain).
3ºP: Use the paellera pan, add the vegetable oil, the garlic, the onion, curcuma, saffron and sauté for 3 minutes, then add the tomato and sauté for 4 more minutes.
4ºP: Add the ground red pepper, squid, mussels, clams, prawns and sauté for 5 minutes. Add the fish broth, Quinoa, beans and salt to taste.
5ºP: Let cook with the lid in the air, for 15 minutes, and the olive oil, put out the fire.
